Ingredients:

  • 55gr fresh shiitake mushrooms.
  • 55gr asparagus.
  • 1 minced clove of garlic.
  • 1 tbsp olive oil.
  • 2 eggs.
  • 2 tablespoons milk or cream 3 tbsp shredded cheddar cheese or cheddar-parmesan cheese blend 1 pinch of salt, pepper

How to make baked eggs with mushrooms and asparagus

Preheat the oven at 200C. Cut the mushrooms or chop into small pieces. Cut asparagus into 2.5cm long pieces. Drizzle olive oil on the pan, put mushrooms, asparagus and garlic in the pan.

Place the pan in the oven for about 10 minutes until the asparagus is soft. Remove the pan from the oven. Brush the mushrooms and asparagus aside, to make room for the eggs.

Smash the egg into the gap in the pan. Drizzle the milk on it, then sprinkle the cheese and a pinch of salt and pepper on the pan. Put the pan into the oven, bake for another 7 - 8 minutes (depending on the ripeness of the eggs you want).

Remember, even when the oven is turned off, the pan is still hot and makes the eggs more cooked.
