Pasta will absorb the salt water when it is soft boiled so you do not need to add too much salt later. But how much salt? The cookbooks all say "generous" salt, you can use 1-2 tablespoons (15-30g) of salt for every 4 liters of water.

Drop noodles into the water

Put all noodles into the pot at the same time, bend the long noodles into the water and around the pot, when the boiling water will start softening the noodles. Do not cut, break pasta to fit the pot. Immediately afterwards, use the tong to flip pastas. The surface of the noodles when immersed in water releases starch as a glue if you don't stir it right away and make the noodles stick together. How long should it be boiled?

Most of the cooking instructions on the box indicate the cooking time for about 10-12 minutes. But that's just a suggestion, check out the noodles a few minutes earlier. Use a long plate of bread or a device to pick up the noodles to take a piece of noodles, let it cool for a while and then try it. When the pasta is well cooked, it is time to remove the noodles and let them dry. Note, please keep ½ cup (125ml) of boiled water to use when cooking the sauce!

How to complete pasta?

After draining the noodles, pour it back into the pot, add about 2 cups (500ml) of sauce and remaining broth. Cook and stir quickly over high heat until the sauce starts to thicken. Then, depending on the recipe you make, you can add a little fresh cream, or 1 tablespoon olive oil or soft butter and stir with the sauce. Your pasta will cover a layer of smooth cream. Finally, you can sprinkle some fresh grated parmesan cheese, serve pasta to the plate and pour the leftover sauce over.
